Chicken Tacos

4 Chicken Breasts
2 C. Mango Salsa
3/4 C. Brown Sugar
Corn Tortillas
Tomatoes
Lettuce
Sour Cream
Cilantro
Limes


Put chicken, salsa and brown sugar in a crock pot and cook all day. At the end of the day, shred the chicken with a fork into the sauce. Serve on warm corn or flour tortillas with lettuce, tomatoes, sour cream, cilantro and a lime wedge.



I like to fry my corn tortillas in a little oil in a fry pan. I fry them for about 10 seconds, turn and then fry again for 10 seconds. Pat dry in between 2 paper towels. Fold immediately in half, Place in 9 x 13 pan lined with paper towels. Place a fork on top of the folded tortilla to help keep its shape.
