Ranch Potatoes

These potatoes are so good you will want to make them everyday.  The problem is you just can't because they are so fattening.
 

Ranch Potatoes

3 lb. Red Potatoes
1 C French Friend Onions
1/2 lb. Bacon, fried cut into small pieces
1 C Sour Cream
1/2 C Butter, Softened
2-3 Green Onions, Optional
Salt and Pepper

Quarter Red Potatoes and put in a large pot of  boiling water.  Bring water back to a boil, then put the lid on and reduce temperature to a slow boil  for 20 minutes or until potatoes are fork tender.

Drain off the water and put in your mixing bowl for your electric mixer.  Beat potatoes with sour cream and butter until a nice consistency or use a potato masher for chunkier potatoes.  Add bacon and French Fried Onions and mix by hand.  Add Salt and Pepper to taste.  Serve nice and hot.  SO GOOD!


The green onions would be so nice in this dish.  I just cannot use them because I have a boy who will not eat anything green.  If it were just me eating, I would certainly use them.

When frying your bacon, cut it up into small pieces before. It will render a lot more grease and actually make your bacon better for you because it will have less grease. Fry it up, drain off the grease into a small glass bowl and then pour the bacon onto paper towels to decrease the fat even more. Let cool and then use as directed by recipe.
