Tomato Pie


Tomato Pie

1 Pie Crust 
1 C. Swiss Cheese
4 -5 Roma Tomatoes
1/4 Tsp. Basil 
1/4 Tsp. Salt
1/4 C. Onion, chopped (If I am in a hurry I used dry onions, 2 Tbsp.)
1/4 C. Mayonnaise

Chop tomatoes, but take out seeds and watery parts.  Grate cheese.   Bake pie crust at 400 for 5 minutes.  While crust is baking, mix tomatoes, cheese, mayonnaise, basil, salt and onions together in a large bowl.  Pour mixture into hot crust when done.  Bake for 20-30 minutes until cheese is melted and center is set.  

Let cool and serve warm.  This is a wonderful lunch  or brunch dish.  When I have a lot of tomatoes that might be a little beyond using  fresh, I chop them up and use them in this recipe
