Chicken Salad Sandwiches
3 C. Chicken, Cooked and Shredded
1 1/2 C. Celery
1/2 C. Red Onion, Chopped
1 1/2 C. Red Grapes, Seedless
1/2 C. Cashews (optional)
1/2 C. Miracle Whip
1/2 C. Mayonnaise
3 Tbsp. Lemon Juice
1 tsp. Salt
1/2 tsp. Pepper
12 Croissants (Fresh Market and Sam's Club sell smaller ones than the larger Costco kind)
Chop celery and onion into small pieces. Cut each grape in half lengthwise. Place in a large bow with chicken and cashews. In a small bowl mix Miracle Whip, mayonnaise, lemon juice, salt and pepper. Pour sauce over chicken and vegetables. Spoon into croissants.
