If you like cherries like I do, you will love this dessert. Served with vanilla ice cream it is a bit hit!
Cherry Crisp
1/2 C. Sugar
1/4 C. + 3 Tbsp. Flour
6 C. Pitted Frozen Cherries, thawed
1 C. Quick-cooking Oatmeal
1/2 C. Brown Sugar
1/4 C. Butter, softened
1/2 C. Sliced Almonds
(I double the topping because I love a lot on my Cherry Crisp)
1. Combine sugar, 3 Tbsp. of flour and cherries.
2. Put this mixture in a greased 13 x 9 pan. Mix the oats, brown sugar and flour.
3. Cut in the butter with a pastry blender or pulse very lightly in a Cuisinart until crumbly.
4. Stir in almonds and sprinkle evenly over the cherry mixture.
5. Bake in a 350° oven until hot and bubble for about 40 minutes.
6. I double the above topping recipe and use 3 bags of frozen cherries from a grocery store.
If you are using frozen cherries from Costco, I use the whole bag.
7. Due to the fact that I double the topping, I bake my Cherry Crisp for an hour.
