Cherry Crisp

If you like cherries like I do, you will love this dessert. Served with vanilla ice cream it is a bit hit!


Cherry Crisp

1/2 C. Sugar
1/4 C. + 3 Tbsp. Flour
6 C. Pitted Frozen Cherries, thawed
1 C. Quick-cooking Oatmeal
1/2 C. Brown Sugar
1/4 C. Butter, softened
1/2 C. Sliced Almonds

Combine sugar, 3 Tbsp. of flour and cherries.  Put this mixture in a greased 13 x 9 pan.  Mix the oats, brown sugar and flour.  Cut in the butter with a pastry blender or pulse very lightly in a Cuisinart until crumbly.  Stir in almonds and sprinkle evenly over the cherry mixture.  Bake until hot and bubble for about 30 minutes.

I like a lot more topping than most people.  I doubled the above topping recipe and used 2-3 bags of  frozen cherries.
