Veggie Pizza

I am always looking for an easy appetizer to take to parties.  With all the BBQs and gatherings this summer, you can take this little dish and watch it disappear.


Veggie Pizza

2 Pkg. Crescent Rolls
2 (8 oz) Cream Cheese Bricks
1/2. C. Mayonnaise
1 tsp. Dill
1 tsp. Garlic Powder
1 C. Cheddar Cheese, finely shredded
1 bunch Broccoli
1 Red Bell Pepper
1 Carrot

Open both packages of crescent rolls and spread them out on a jelly roll pan.*
Push them together and seal. Place in oven and back as directed on package.  




Get cream cheese room temperature by leaving it on counter or putting in your microwave for 1 minutes on power 2.  Beat with a mixer adding mayonnaise and herbs.  I like to put this in a ziploc bag, cut off the corner and then pipe it on to the cooled crust.  Spread with a spatula.

Cut off stems of broccoli to make very small florets.  Slice bell pepper into very small chunks.  Peel carrot and then grate on a small grater to make fine pieces.  Sprinkle the cheese on top of your spread, then add broccoli, bell peppers and carrots.  Use your hands to smash all the vegetables into the spread so everything stays nice and put.  I use a pizza cutter to slice it and then serve it on a platter.
