Zucchinni Cake

It is almost "Zucchini Time"! The plants are maturing and soon there will be so much fruit you will not know what to do with it. Make this delicious cake. Can you see all those lovely nuts and chocolate chips?  So yummy!


Chocolate Zucchini Cake 

1/2 C. Butter
1/2 C. Oil
1 3/4 C.Sugar
2 Eggs
1 tsp. Vanilla
1/2 C. Sour Cream
2 1/2 C. Flour
1 tsp. Salt
1 tsp. Baking Powder
1 tsp. Baking Soda
4 Tbsp. Cocoa Powder
1 tsp. Cinnamon
2 C. Zucchini, finely grated (skin on)
3/4 C. Walnuts, chopped
3/4 C. Brown Sugar
3/4 C. Chocolate Chips

Cream the butter , oil and sugar.Mix dry ingredients and add to sugar and oil mixture.  Add grated zucchini and mix together.  Pour into a greased 9 X 13 pan.  Mix chopped walnuts, brown sugar and chocolate chips in separate bowl and sprinkle on top of batter.  Bake at 350 for 40-45 minutes or at 325 for 1 hour.  Serve warm with ice cream.  So Good!
