Hawaiian Haystacks

2 C. Rice
4 C. Water
1 C. Butter
1 C. Flour
2 C. Chicken Broth
1 C. Milk
1 C. Cream
2 - 3 C. Chicken, Cooked and Diced
1 Can Pineapple
2 Cans Mandarin Oranges
1 Bunch Green Onions, Chopped
1 C. Celery, Chopped
1 C. Almonds, Sliced
1/2 C. Coconut, Shredded
1 -2 C. Cheese, Shredded
1 Bag Chow Mein Noodles
1 Green Bell Pepper, Chopped 
2 Tomatoes, chopped

Make your gravy and rice.  After these two are done, keep warm while you prepare the other ingredients to make a nice buffet as displayed below.  I like to start with chow mein noodles, rice and then gravy.  I included all the ingredients I love.  Feel free to add or take away any that your family does not like.  The kids like the sweeter items like pineapple and oranges.  They are not so happy to put on the vegetables.

Chicken Gravy

1 C. Butter
1 C. Flour
2 C. Chicken Broth
1 C. Milk
1 C. Cream
Chicken

Melt Butter in a saucepan.  Add flour.  Stir and cook for about 2-3 minutes.   Add chicken broth.  (Remember I like to use 1 chicken bullion to 1 c. of hot water.)   Add the milk and then cream.  Get it to boil. Stir until it is the consistency you like.  I have a tendency to like thicker gravy.  Add more chicken broth or milk if it is too thick for you.  Add a little at a time, say 1/2 cup at a time.  Make sure you bring it back up to a boil before adding more liquid.  Add cut up chicken and then start stacking.
