Snickerdoodles

 



Snickerdoodles are a family favorite with the tang of cream of tartar inside paired with the sweet of cinnamon sugar on the outside. These are a favorite cookie any time of year, but they are especially perfect at Christmas.   Cinnamon is a spice that always makes me think of Christmas. These cookies are perfect to leave for Santa!  Perfect to take to a cookie exchange!  Perfect to make and take to work!  

They are winners any time you serve them!




The key is to roll these around in the cinnamon sugar until they are fully coated.  These are the cookie of choice for my daughter, Cari, so we make them often at my house.  This recipe is so good, easy, soft and yummy!  Besides, they make your house smell wonderful! 


How to Make Snickerdoodles

1.  Mix the butter and 1 1/2 C. sugar together for 4 minutes. This allows the sugar crystals to completely dissolve in the butter and gives your cookie more volume.  

2.  Add the eggs one at a time.  I like to break all my eggs into a small dish and gently add them one at a time.  It is amazing to me how the eggs stay together in the white sacs with the yolk intact.  They will plop out one at a time if you gently pore them out.

Cracking an egg on a flat surface keeps the membrane intact which allows you to put the eggs in a bowl and drop them one by one into your cookie dough.  Cracking on the edge of a bowl creates more shells in your eggs and a broken membrane.
  
3.  Put the flour, cream of tartar, baking soda and salt in a bowl.  Mix the dry ingredients together with a spoon.  Add to the butter mixture one spoonful at a time.  

4.  Mix 1/2 C. sugar with 1 Tbsp. Cinnamon.  Mix well

5.  Drop by spoonfuls on a plate.  Roll each spoonful in your hand and then drop into the cinnamon sugar mixture.  I use an ice cream scoop to make balls of cookie dough.  I place them on a plate and then use my hands to make them round.  

6.  Drop cookie balls into the cinnamon sugar mixture.  After making sure they are completely covered in cinnamon sugar, drop them on a greased cookie sheet.  I do not like to crowd the cookies.  I never put more than 12 cookies on the cookie sheet.  Then I use a glass to smash them down, just a bit, to give them that uniform size.


7.  Bake in a 350° oven for 9 minutes. Watch for the cookies to crack.  When you see the cookies, crack, let them cook for one more minute.  Take them out and  place them on cooling racks.

2 1/2 C. Flour
1 1/2 tsp. Cream of Tartar
3/4 tsp. Baking Soda
1 tsp. Salt
1 C. Butter
1 1/2 C. Sugar
2 Eggs
1 Tbsp. Cinnamon
1/2 C. Sugar

1.  Mix the butter and 1 1/2 C. sugar together for 4 minutes. 
2.  Add the eggs one at a time. 
3.  Put the flour, cream of tartar, baking soda and salt in a bowl.
4.  Add the dry ingredients to the wet ingredients.
5.  Mix 1/2 C.  sugar with 1 Tbsp. Cinnamon. 
6.  Drop by spoonfuls on a plate. 
7.  Drop cookie balls into the cinnamon sugar mixture.
8.  Bake in a 350° oven for 9 minutes.
