Raspberry Pear Salad

 




Like the rest of you, at the beginning of a new year, my desire is to eat better or at least add more greens to my diet.  I still want my food to be delicious and this salad does both.  It is a healthy dinner idea or it can be a side for a steak and some delightful green beans.  Anyway you serve this salad, it will be an elegant addition to your meal.


How to Make
Raspberry Pear Salad

1. Get some beautiful spring greens. This salad is so pretty, I like to serve it on individual salad plates instead of making it in a bowl.  You can also serve it on a large platter creating a stunning presentation as well! 

2.  Cut up the pear into bite size pieces.  Leaving part of the skin on adds to the color and presentation of the salad.  Cut the pear in fourths and cut out the core.  Slice each pear piece into small pieces, easy for eating.
 
3.  Sprinkle on the raspberries.  The more the merrier if you ask me.  I am a big raspberry lover and I adore the bright, cheery red that they add to this dish.

4.  Candy some pecans and break them apart into small pieces.  There are instructions to candy nuts later in the post, but since I found these praline pecans at Costco, I am asking myself, why?

5.  Break apart the Feta with your fingers and sprinkle on top of everything.

6.  Make the Blush Salad Dressing and drizzle on top.  I do not toss this salad before serving.  I find the presentation is so nice, I let each individual toss their own salad.

Raspberry Pear Salad

1 Bag of Spring Greens
1 Pear
1/2 - 1 Cup Raspberries
1/2 Cup Candied Pecans
1/4 - 1/2 Cup Feta
1/2 Cup Blush Salad Dressing

Blush Salad Dressing
1/2 C. Red Wine Vinegar
1/2 C. Sugar
1/2 tsp. Ground Mustard
1/2 tsp. Salt
1 Cup Canola Oil

Candied Pecans
1 Cup of Sugar
1 Cup of Pecans

1.  Place 1/2 c. spring greens on each plate.
2.  Cut up the pear and place on greens.
3.  Sprinkle raspberries on pears and greens.
4.  Break up the candied pecans and sprinkle on top.
5.  Crush the clumps of feta and spread on salad.
6.  Drizzle 1 - 2 Tbsp. salad dressing on each salad.

Dressing Instructions
7.  Place sugar and red wine vinegar in a blender.
8.  Add mustard and salt.
9.  Mix until sugar is dissolved, 1-2 minutes.
10.  Add oil, through the hole in the lid, while blender is going, creating a stream of oil into the vinegar mixture. The slow addition of the oil helps keep the salad dressing from separating.

Candied Pecans Instructions
11.  Place sugar in a fry pan.
12.  Heat sugar until it starts to melt.
13.  Add whole pecans and stir until everything is coated with melted sugar.  
14.  Place on a plate until everything cools and then cut or break apart.
